🛒 Ingredients

  • 1 cup instant couscous

  • 1 cup boiling water

  • 1 tbsp olive oil

  • 1/2 zucchini, diced

  • 1/2 carrot, shredded

  • 1/2 red bell pepper, chopped

  • 1/4 cup canned chickpeas (rinsed)

  • Salt, pepper, cumin to taste

  • Fresh parsley or mint (for garnish)

  • Optional: lemon juice or harissa for extra flavor

👨‍🍳 Instructions

  1. In a bowl, pour boiling water over couscous. Cover and let sit for 5 minutes.

  2. Meanwhile, sauté the vegetables in olive oil for 5–7 minutes. Add spices.

  3. Fluff the couscous with a fork, then mix in the cooked veggies and chickpeas.

  4. Adjust seasoning, garnish with parsley or mint, and serve warm or cold.
